Step 1

1) First, combine the following ingredients orange juice, oil, butter, vinegar, Worcestershire sauce, garlic, chives and seasonings in a 2-gallon resealable plastic bag. Add chicken; seal bag, and then turn to coat chicken well. Place bag in a pan. Refrigerate 8 hours or overnight, turning it occasionally. 2) Next Preheat oven to 350°. Drain and save marinade to bash chicken occasionally, then discard it. Put chicken on a rack in a shallow roasting pan. Bake, uncovered for 2 hours 15 minutes to 2 hours 45 minutes or until a thermometer inserted in thigh reads 180°. Half way roasting brush base chicken with marinade. (Note: base in a way to not let it run down in the pan). Cover loosely with foil if chicken browns too quickly. (Note: DO NOT BASE CHICKEN AFTER FINISHED ROASTING.) 3) Remove chicken from oven; tent with foil. Let stand 15 minutes before carving.

4) Second Roasting Method: Roast for 20 minutes at 450 degrees, then reduce the temperature to 350 degrees and continue roasting for about another 40 minutes. Baste every 20 minutes, if desired. Remove from the oven when the internal temperature reaches 165 degrees. Use a meat thermometer to check right where the leg connects to the body. Let it rest for about 20 minutes before carving.
